🎵 This shit is bananas, B.A.N.A.N.A.S 🍌 Wasn’t sure what to have to break my fast today (been doing 16 hour intermittent fasting every day) and remembered I froze some banana pieces to make some Nice Cream! 🥥 With a little coconut water, a little vanilla and a quick whizz in the nutribulletaus, and voila! Probs a bit too much coconut water but tasty all the same! 😱 I must admit though, my NutriBullet TERRIFIES me, I legit push it in and then run behind a wall while it does it’s 60 seconds, they’re so loud and violent!!! And mine has started making a high pitched whirring noise so it makes me jump, which Justin finds ABSOLUTELY hilarious to watch 💥 Maybe thats just me? HA

Accidentally stumbled upon a vegan cafe for coffee today. A first for everything! My first beetroot latte with macadamia milk and hubby's first coffee with rebel mylk (coconut cream, cashew, brown rice and nutritional yeast). I really enjoyed my beetroot latte and the coffee exceeded Ben's expectation given it wasn't real milk ("what do you mean what milk would I like with my coffee??" Haha). Weekend dessert? 🍰🍫 This brownie with ‘ice cream’ and warm berry couli is gluten free and dairy free, it’s high in fibre, protein, healthy fats and is a source of iron! Can easily be made vegan by replacing the honey with brown sugar 🌿 Ingredients -1 can black beans, drained (don’t be put off yet) -1/4 cup dates, soaked in boiling water for 10 mins, then drained -3 tsp honey, liquid or melted -1/2 cup almond meal -1/4 cup olive oil (just under works best) -1 TBSP peanut butter (optional- I love PB) -2 TBSP cocoa powder -1/2 frozen banana (per serving/ person) -1/4 tsp vanilla essence -Handful frozen berries (per serving/ person) -1 tsp chia seeds -Sliced almonds, desiccated coconut, & cacao nibs (for decoration- option) Method 1. Preheat oven to 180 on bake. 2. Blend black beans, dates (leaving one out for couli), 2 tsp honey (leaving one out), almond meal, olive oil, peanut butter, and cocoa powder together until reaches brownie like consistency. 3. Line a tray with baking paper and tip mixture into it. 4. Sprinkle brownie mix with sliced almonds and cacao nibs, and using a basting brush, brush lightly with remaining tsp of honey and some olive oil. Place in oven for 30-40 mins. 5. Meanwhile, blend frozen banana with 1/4 tsp of vanilla essence and set aside. 6. Blend berries with remaining date, place into a small pot, and add chia seeds. Heat slowly. 7.
