🍚Any other sushi lovers out there? 🍣 I LOVE sushi and often crave it! Today was one of those days so I decided to make some smoked salmon and veggie sushi 😋! Yesterday I made some sushi rice (the secret is just short grain rice) and I used it to make this amazing creation!! In my sushi was just some smoked salmon, roasted Japanese sweet potato, carrot, cucumber, yellow bell pepper and sesame seeds 👊🏻! Keep them on hand as a nutritious alternative when tempted by a certain peanut butter and chocolate 🍫 candy that shall remain nameless. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 📝 Ingredients ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🔹 2 heaping tablespoons smooth almond butter 🔹 1 scoop Myology Chocolate Whey Protein Isolate 🔹 1/3 cup organic coconut 🥥 flour 🔹 1 ½ tablespoons raw manuka honey 🍯 🔹 1 teaspoon vanilla extract 🔹 ¼ teaspoon ground cinnamon 🔹 6-8 tablespoons unsweetened almond, soy, or coconut milk 🥛 🔹 Good ‘n Natural Powdered Peanut Butter 🥜 🔹 2 tablespoons of ground flaxseed ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ ✨ Directions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a large mixing bowl 🥣, combine the protein powder, coconut flour, cinnamon, and flaxseed. Add the almond butter, manuka honey, vanilla extract, and milk to the bowl. Blend with an electric hand mixer until a slightly sticky, paste-like texture is achieved. - Using your hands, roll the mixture into individual balls that are about 2-3 inches in diameter each. If the mixture feels too dry, add a splash of milk, blend, and try it again. Spread about 2-3 tablespoons of the powdered peanut butter across a small plate. Roll each ball on the plate to coat with a small amount of the powder evenly across the entire surface.  Store in the fridge when finished. May have created my ideal avocado toast, loaded with all my faves 😉 bonus points to the cream cheese layer because I used elliesbest nut milk bag to make homemade cream cheese by straining plain yogurt! 🤓 simply add around a cup of yogurt to the corner of the nut milk bag, hang it over a bowl/jar (I made a loop with the top of the bag and stuck a chopstick through it, resting the chopstick over a weck jar), leave it in the fridge for 2 days and voila 💃🏻 cream cheese without weird additives and made even more budget friendly by using "fitjade" on your elliesbest order! . Slathered a thick layer of that creamy goodness (also helps the toppings stick to the bread) on toasted canyonglutenfree honey oat bread, along with avocado, air fried brussel sprouts, a poached egg (where da yolk jade 🤦🏻‍♀️), and everything but the bagel seasoning 🥑 ok also some cucumbers bc they looked pretty ~refreshing~ hehe . Happy Thursday! It is still well over 100 degrees here and I’m waiting for it to cool down to go for a walk. I’m still in a lot of pain throughout my entire right side. It absolutely makes it harder on me physically but I mentally I need to get out and zone out. The other sucky thing is my fitbit is not working correctly. It keeps shutting off which is frustrating because I use this watch as my gauge to help me meet my goals. Regardless of my fitbit not working and my increased pain level I’m NOT giving up. And if you’re on your own journey don’t give up either 💕
