A mix up on traditional Bolognese. Actually, I'm not sure I can call it Bolognese anymore 😂 I would say a slightly healthier version. For future reference, be more generous with seasoning and soak mince for longer.

Rainbow Mince Pulao 500g beef/mutton mince (washed & drained) 2 tb guee 2 tb oil 2 sliced onions 1 tsp whole Jeera 1 cinnamon stick 3 Elachis 2 cloves 3 peppercorns 2 large tomatoes (liquidized) 1 tb tomato paste 2  tsp garlic paste 1 tsp ginger paste 1 tsp red massala 1 tsp chilli powder 1 tsp salt ¼ tsp turmeric powder 2 tsp  dhania Jeera powder 1 1/2 tsp shaan  beef biryani massala/meat massala(optional) 1 tb lemon juice 3/4 cup sour milk /yogurt 2 large potatoes (cubed and fried) 2  1/2 cups basmati rice pre boiled, drained Few whole green chillies Fresh dhania to garnish Optional: frozen peas or mix veggies Boiled eggs Braise the onion in little oil and guee with cinnamon, whole jeera seeds, cloves, elachi and peppercorns until they are golden brown. Add mince, ginger, garlic, red massala, green chilli paste, salt and lemon. Braise well, stirring all the time to "break" all lumps from the mince. Let it cook until water burns out. Add then the tomatoes, spices and tomato paste. Cook for a few minutes in low heat. Add then the sourmilk/yogurt. Cook for 5 min.At this stage you can add mix veggies/ frozen peas and fried potatoes. Cook for five more minutes Make layers with the preboiled rice, the mince mixture, the last layer must be of rice. Add green chillies , fresh dhania and guee over the rice. I coloured some of the preboiled rice with food colouring. Sprinkle a little water and allow to steam until rice is fluffy.  Garnish with green dhania. You can also garnish with fried onions. I served with dhai ( coloured the dhai also)fried papar and kachoomer/ achar sheilamahomedrehman #happywivescooking #mince pulao
