🍵 Matcha Chia Seed Pudding Starting off my morning right with this superfood pudding👌🏼 It’s got matcha AND chia seeds. Super healthy & delicious, just what I needed this Friday✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What’s in my bowl🥣 ▫️3/4 cup Unsweetened Almond Milk ( lovemysilk) ▫️3 tbsp Chia Seeds ▫️3 tsp Matcha Powder ( ujidomatchatea) ▫️1 tsp Vanilla Extract ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Mix everything together in a mason jar & refrigerator overnight (make sure to stir the chia seeds well otherwise they will clump). Meal planning can help you maintain your weight and even your budget too😋 As I'm out for dinner tonight, I was absolutely sure I will eat lunch at home. I first decided to make a cold lentil sprouts salad. But the unpredictable London weather suddenly gave way to rain showers and wind. (it's sunny again 😂☀️-not complaining!). I put together this warm and fun salad bowl. It's soo simple yet so good. I've been attempting to make home made sprouts and it's definitely a good idea. I always have something nourishing and filling in my fridge. To make these, I used half an onion, one garlic clove, one tomato, half a lemon 🍋 chicken stock cube(you can use vegetarian), whichever veggies I had available(I used carrots, corns and French beans), a pinch of cayenne pepper, lentil sprouts, dried oregano and jalapeños. I heat a spoon of olive oil in the pan. Add onions when it's hot. Let the onions turn slightly golden then add garlic. Let the onions and garlic cook for a bit then add tomatoes. When the tomatoes are well cooked, add some water, add lemon, pepper, chicken stock cube(I find the stock quite salty so I didn't add salt.) and finally the jalapeños. Add the veggies. Finally add the lentil sprouts and let them cook for about 5-7 minutes. To finish, I added a few dollops of yoghurt. I'm really enjoying it! TRADITIONAL MODAK Tradition and culture mixed together, festival and food go hand in hand..celebrate the joyous festival of Ganeshotsav with special Traditional Modak...🐘 GANPATI BAPPA MORYA🎊 . . . Traditional Modak Serves- 2-3 Ingredients- 2 cups basmati rice flour (modak rice flour) 2 cups water Salt to taste 1 tbsp ghee ½ tbsp sugar FOR FILLING 1 freshly grated coconut 250 gms jaggery/gud Elaichi powder Method Roast the freshly grated coconut for a long time, add jaggery/gud, Elaichi powder and mix well to form the modak filling. Now add water in pan and let it boil. Add ghee, salt and rice flour to it. Cover it with the lid for sometime. Once the flour leaves the edges, take it off the heat and keep it aside. Always keep it covered with a wet cloth. Now take a small portion of the dough, make a ball. Flatten the dough with fingers to make a cup. Fill the centre with the filling. Close the modak and steam them for 15-20 minutes using banana leaf. BLUEBERRY BURST: ⠀ This protein packed blueberry burst is not only delicious and nutritious but it’s so quick and easy to make. As a new mom I need good dense nutrients and I don’t have much time so this does the trick every time. ⠀ 💜💜💜💜💜 WHAT’S IN IT: ⠀ 1/2 cup almond milk⠀ 1 frozen banana ⠀ 1 cup blueberries⠀ 3 dates (small)⠀ 1 scoop Raw meal protein shake by gardenoflife ⠀ 4 cubes of ice (optional)⠀ 1/4 cup oats⠀ 💜💜💜💜💜⠀ ⠀ METHOD: ⠀ Blend all ingredients in a high speed blender (we use a vitamix) ⠀ Pour into your favorite mug or mason jar ⠀ Too with a handful of frozen blueberries ⠀ Drink and enjoy 😉 ⠀ 💜💜💜💜💜⠀ ⠀ WHY I DRINK IT: ⠀ - breastfeeding. I absolutely HATE drinking protein shakes, so this is my solution. 😁 This year was a challenge to find my go-to recipe since I can’t eat eggs anymore! So this is #eggfree 👌🏻 ••• RECIPE👩🏻‍🍳: -1 tsp coconut oil -2 tsp baking powder -2 Tbsp water -61g pumpkin purée -1 scoop protein powder -Pumpkin pie spice to taste -Stevia/sweetener of choice to taste • DIRECTIONS 📝: 1. Heat waffle iron to medium high. 2. Mix coconut oil, baking powder and water together. (This acts as an egg substitute.) 3. Then add pumpkin, protein powder, pumpkin pie spice & stevia. Mix well. 4. Pour half into waffle iron, DO NOT OVERFILL. (Protein powder expands.) 5. Monitor while cooking and take out at your desired amount of crispy! 6. Top with SF syrup, any other toppings you like & ENJOY! • MACROS: (for waffles alone, no toppings) Calories: 175 ▪️Protein: 24.5g ▪️Carbs: 7g ▪️Fats: 5.5g ▪️Fiber: 2g 👉🏻Facts will vary slightly based on protein powder used.👈🏻 ••• Notes 🗒: -Make sure your waffle iron isn’t too hot!
