Y’all can we talk about the pressure of being in your 20’s? Let alone 26... adios health insurance 👋🏼 (jk working on it). Growing up I thought 26 was the perfect age to get married and have babies, I thought I would be in a stable and thriving career, my bank account would be over flowing with cash money and I would own a house. 26 seemed so old in middle school & high school, I thought people had it all figured out. Turns out, the lie is: you have to have it figured out. Once you know, NO ONE HAS IT FIGURED OUT then we can stop comparing our lives to the glamorous peeps on instagram and start living our truth! We get upset because of EXPECTATION of where we are supposed to be. But what if we just appreciated where we are? Sister, if you’re stressin, I want to remind you YOU ARE EXACTLY WHERE YOU ARE MEANT TO BE. The next step will naturally unveil itself. 💗 Hang in there, boo. You’re doing a great Job! Coconut Shrimp Torta with Figs Ingredients 4 oz Shrimp White Raw Peeled and Deveined 31-40 No Tail Individually Quick Frozen 1/3 Ea Fig 20-22 Count Fresh 1/2 oz Arugula Wild Fresh 5 oz Coconut Sweetened Flake Fancy Bulk 1 Ea Egg Shell on White Large Grade Aa Loose Pack Refrigerated 2 oz Corn Starch 3 oz Bean Refried Pinto with Lard 3/4 oz Onion Green Scallion lceless Clean and Trim Fresh 1 1/2 oz Cheese Cotija Refrigerated Delivers Within 2 Business Days 1 Ea Baguette French Demi Partial Baked 4 Ounce Frozen 2 oz Pepper Mini Sweet Red Yellow Orange Fresh Preparation In a bowl, add egg and milk and whisk. In another bowl, add cornstarch and raw shrimp. Dredge shrimp in egg wash and roll in shredded coconut and set aside. Heat refried beans to temp. Slice bread lengthwise and toast. Spread the refried beans on bottom and start assembling the Torta. Deep fry shrimp for 3 minutes and drain. Add shrimp to the bottom of bread. Thinly slice the figs and the sweet peppers. Add arugula then figs and sweet peppers. Caldo de Camaron⠀ ⠀ Ingredients⠀ 6 oz Shrimp White Raw Peeled And Deveined 31-40 No Tail Individually Quick Frozen⠀ 5 oz Tomato Roma Fresh⠀ 2 Tbsp Base Clam Gourmet Paste⠀ 4 oz Onion Yellow Jumbo Us #1 Fresh⠀ 1/8 oz Garlic Whole Peeled Reclosable Bag 100-130 Cnt/lb Fresh⠀ 2 Tbsp Oil Olive 10% Blended⠀ 1/2 Ea Tortilla Flour White 1 O" Pressed⠀ 4 oz Carrot Jumbo Fresh Carton, Diced⠀ 2 Ea Potato 60 Count Average Idaho Russet Us #1 Grade Carton Temperature Control Above 40 Degrees Fresh, Diced⠀ 1/2 oz Cilantro, Stems reserved⠀ 1/4 oz Pepper Chipotle In Adobo Sauce⠀ 1/4 Tsp Pepper Red Crushed⠀ 1 Ea Lime Persian 200 Size Fresh, Cut into wedges⠀ ⠀ Preparation⠀ Preheat an oven to 425 degrees.⠀ Cut the tomatoes in half as well as the onions. Place them on a sheet tray along with the garlic adn drizzle in oil and a touch of salt. Roast for 25 minutes or until the mixture becomes caramelized.⠀ Place in a blender with the tortilla and blend until smooth.⠀ Place the tomato mixture in a pot and add a quart and a half of water.⠀ Whisk in the clam base. Add the diced potato and diced carrot. Add Chipotle adobe sauce and red crushed pepper for flavor.⠀ Chop the cilantro leaves and reserve for garnish.⠀ Tie the cilantro stems with butcher twine and drop into the mixture with the chipotle.⠀ Bring to a simmer stirring occasionally. Add the shrimp and cook on a simmer until it is reduced by 10%. Believe it or not, this burger is 💯 percent meat-free! I have gone semi-vegetarian (is that a thing?) in an attempt to drop a few lbs and reduce my cholesterol and fat intake so even my cheat meals have been mildly health conscious lately. None the less...this baby blew me away with it’s umami flavor notes and unctuous bite! Pro tip: order the signature sauce that’s on the menu, a blend of mustard mayo ketchup and definitely some irresistible seasoning that had me dunkin each and every morsel! 🍔 Impossible burger 🍔
