3 SISTERS SQUASH 1 tablespoon olive oil 3 cloves garlic, minced 3 acorn or carnival squash 1 cup red onion, diced 2 to 3 serrano chiles, minced 3 cups cooked black beans 2 cups corn kernels 2 cups broccoli florets, diced 1 ½ cups cooked wild or brown rice (optional) ½ cup fresh parsley, minced 1 teaspoon paprika Salt and pepper, to taste Heat oven to 400 degrees. Combine olive oil and 1/3 of the minced garlic in a small bowl set aside. Remove stem from squash and cut each in half from top to bottom. Scoop out seeds and reserve for another use. Brush inside of each squash with the garlic oil. Place squash flesh side up on a baking sheet and roast for about 35 minutes. Meanwhile, prepare the filling: Heat olive oil in a skillet over medium-low heat. Add onion and chile and sauté for about 2 minutes. Add the remaining garlic, the beans, the corn, the broccoli and the rice, if using. Cook for 3 to 5 minutes, until corn is bright yellow and broccoli is bright green. Stir in parsley, paprika, salt and pepper and continue to cook for about a minute. Adjust seasonings if needed. Remove squash from oven. Scoop corn and bean mixture into center of each squash. Serve right away.

ugh, i hope you read this, and yes i know, maybe you don't care, but just sharing it helps me a little. life is overwhelming. very fucking overwhelming, and i wish i could say that the reason these cinnamon rolls exist is because i woke up early feeling rested and happy and very ready for a delicious Sunday breakfast, but the truth is that they exist because of my lack of sleep and sporadic 'somehow' mild anxiety attacks and constant state of sadness I've been having lately and specially some hours ago. i haven't slept since yesterday and couldn't just shut down my brain at all, and of course the hugs from my sweet man help me a lot, but i just couldn't stop. so i got up and decided to do some stretching while the dogs gave me kisses and i started thinking about something else to distract my mind, and i thought about cooking/baking. it can be very therapeutic, and for me is a big and important plus that they are vegan and i TRY to do my the best to NOT hurt anyone. because you and me know that fear and pain are horrible so I CANNOT imagine causing that so someone so innocent. anyway, they were fucking delicious with that vegan cream cheese frosting and right now i just really need to take a nap. "sorry" if you think this post is dumb or something, i'm just trying to always be honest with my thoughts and feelings, and that is with everyone and specially with myself. i'm better now, i'll be alright and everything is going to be OK. i'm here. ~

Tried out this new vegan mayo by rubiesintherubble and it’s AMAZING!! It smells like mayo, texture is super creamy like mayo and my carnivorous fiancé stated ‘it tastes even better than mayo’ 🙌 I highly recommend it, made from Aquafaba, has no nasties in it and totally delish!!
