What's for lunch? I had this delicious salad which I have to share because it was so delicious, nutritious, and easy. I boiled bitesize sweet potatoes. When they were cooked I sautéed them in grapeseed oil with a quarter of a white onion, a cup of chickpeas, salt, pepper, and turmeric and topped it on a bed of greens. I had a hadful of spring mix, a handful of kale, watercress, an avocado, a quarter of a chopped cucumber, and a few slices of a yellow peppers. Waffles recipe from Raquel Smith found on foodal_blog . . . Fried Chicken Recipe adapted from nomyourself . . . 1 pkg gardein Chicken Scallopini . . . EGG WASH . . 2 Tbsp of followyourheart Vegan Egg mixed with 1/2 cup cold water . . FLOUR MIX . . 1 1/4 cup kentuckykernel Seasoned Flour 1/4 bobsredmill All Purpose Flour 2 tsp of frontiercoop Organic Poultry Seasoning . . MILK . . 1 cup lovemysilk lovemysilk Unsweetened Cashew Milk with 2 tsp of Apple Cider Vinegar . . . 1. Cut each Chicken Patty into two 2. Dip in milk 3. Dredge in Seasoned Flour 4. Dip in Egg Wash 5. Dredge again in flour and add to hot oil (365 degrees) 6. Fry for 5 minutes

If you're new to tofu or want to give your shot at a plant based diet but aren't quite sure how to cook it/get the texture right I'm here to help 🤗 packed with protein and so versatile, tofu is my go to 👏🏼 I prefer to bake it for the flavor to hold and have a firmer texture. Drain and dry the tofu using a paper towel, spread cubes on parchment paper and place in oven for 10 min at 425 degrees, take out and flip pieces over and back in for another 10 min. Create a sauce during this time, my go to is BBQ and siracha mixed. Add the sauce to your tofu pieces and bake another 5-10 min depending on how firm you want it... enjoy 🤤🤤🤤🤤🤤👅👅👅👅👅
